Roasted Chicken Breast with a side salad - Low Carb Recipe

If you are folowing along using our low carb menu plan, then the chicken breast might be a leftover from last nights recipe. And this makes for an easy lunch to prepare. You could also just buy a pre-cooked chicken at the grocery store and use that breast meat.

Ingredients :

1 Chicken Breast Sliced- roasted
Handfuls of Green Lettuce (Prewashed, not iceburg) - no limit on the lettuce
1/4 cup Shredded Cheese
2 Thinly Sliced Onion Slices (1g of carbs)
1/8 cup of Crumbled Bacon
1/8 cup Shredded Carrots
1/8 cup Shredded Pruple Cabbage
2 - 4 Tblsp Ranch or Creamy Parmesan Dressing (3g of carbs)
1/4 cup of chopped tomato (2g of carb)

Directions:

Place lettuce in a bowl (I use a pre-washed baby mixed lettuce blend) and top with the other ingredients.

Difficulty : Easy
Makes : 1 Serving
Carbs per serving : 10g of net carbs
