Fried Eggs and Bacon - Low Carb Recipe

2 – 3 Eggs
1/2 Tblsp Butter
2 – 3 Strips of Bacon
Salt & Pepper


In a non-stick skillet, add the bacon over medium heat.  Allow the bacon to cook for several minutes one each side until it’s cooked to your liking. Remove bacon and wipe out the bacon fat (optional).

Add the butter and allow to melt, then add crack the eggs into the skillet and fry the eggs.  While cooking, add a dash of salt and pepper.  I like over-medium, where the egg whites are cooked through, but the yolk is still runny.  So I just flip the eggs once during cooking.  Eggs cook fast, it only takes a few minutes.

Notes: In the low carb world, eggs are a staple for many.  And they are zero carbohydrates.  Egg yolks are highly nutritious and fat is not a problem when eating low carb.  I frequently eat several eggs per day, it's a good high quality sustainable protein source. And when you are eating low carb, fat helps you feel full and satisfied. It also won't spike your blood sugar levels. The whole goal of a low carb / ketogenic diet is to burn fat for as your primary fuel source, so ironically eating fat helps you do that.

I DO recommend organic free range (free romaing) eggs. I think they are worth the extra $1. I also would suggest buying bacon that is preservative free (meaning no nitrites) and preferably organic, if possible. And lastly I always use organic butter and luckily even popular grocery stores seem to be carrying all of these items lately. If you can't afford organic, believe me, I understand, it's not the end of the world and do the best you can. If I were to prioritize, organic butter & eggs would be a high priority to me.
