Greek Scramblers - Low Carb Recipe

Ingredients:

1/4 lb Ground Beef or Lamb
Large Handful of Spinach
1/4 Red Bell Pepper – diced (2g of carbs)
1 Tomato slice - diced (optional)
1/4 Onion - diced (3g of carbs)
2 Eggs
Feta Cheese

Directions :

Saute red pepper, tomato and onion with ground beef over medium heat. Season with salt and pepper. Cook until beef is browned.

Add spinach and cook until spinach is wilted.

Add 2 eggs and scramble them into the mixture and cook until eggs are thoroughly done.

Pour onto plate and sprinkle with feta cheese.

Carbs per serving: 5 g of carbs

Notes: There are numerous variations on this recipe. If you don't have feta, try another cheese. Or green bell pppers, or leave out the peppers altogether. You could substitute kale or lettuce for the spinach.

Eat this as a meal or add a side salad too
