2 – 3 Eggs
1 Tblsp Grass Fed Butter
Handful of Kale or Spinach or Chard
2 Slices Ham - diced
Shredded Cheese (optional)
Salt & Pepper
In a non-stick skillet, add half the butter and let melt. Add the greens and cook until wilted.
In a bowl, crack and whisk eggs and diced butter (with the other half of the butter, dice into small cubes) and add salt and pepper. Whisk for at least 30 seconds to a minute. The more you whisk, the more air will get incorporated and the fluffier the omelet will be.
Pour mixture into skillet and scramble briefly to help it cook. Then just let it cook until almost set. Cover, remove from heat, add cheese and ham and let sit for 2 – 3 minutes.
Ideally the omelet should be able to slide out, using a spatula, you simply want to fold the omelet over, by getting it started and using the pan and spatula to flip it out.

Notes: This is based on a pretty standard omelet recipe. You also substitute bacon, cheese, diced onion, diced bell peppers, sausage, herbs, etc. to flavor the omelet. With a little practice, it’ll become easier and easier.
