Kale & Cheese Omelet - Low Carb Recipe

Ingredients :

2 - 3 Eggs
1/2 cup of Kale - chopped
1 Tblsp Onion - diced
1/4 cup Shredded Cheese
1 tsp Olive Oil
1 tsp Butter
Salt & Pepper

Directions:

In a bowl, add the 3 eggs. Diced the 1/2 teaspoon of butter into small squares and add them to the bowl along with salt and pepper. Whisk thoroughly to mix the eggs.

In a non-stick skillet over medium heat, add the oil, a pinch of salt, the kale and onions and sautee until softened. Remove from pan.

Over low heat, add 1/2 teaspoon of butter to the pan and add the egg mixture. Stir to cook. When almost set, add the kale mixture back in with the cheese, turn off heat and cover to allow to steam to finish.

Using a spatula, remove the omelet onto a plate by folding it over. You can just also fold it over in the pan as well.

Makes : 1 serving
Carbs per serving : 4g of net carbs

Notes: You could also add ham or bacon or even substitute spinach for the kale. Also trying different types of cheeses and I like a little garlic when cooking the onions as well.
