Easy, Quick Grilled Chicken Strips w/ Cauliflower

grilled-chicken-stripsFound these Grilled Chicken Strips in the frozen foods section at the grocery store.  And I think I’m gonna keep these in my freezer as a quick, easy low carb meal.

One Skillet Chicken and Cauliflower

1 Bag Frozen Grilled Chicken Strips
1 Bad of Frozen Cauliflower (riced or florets – I use a Ninja Blender – makes cauliflower rice incredibly easy)
1 Tblsp Curry Powder
2 Tblsp Coconut Oil
1/8 tsp Garlic Powder
2 – 4 Tblsp Hot Sauce (optional)
Salt & Black Pepper

In a large skillet, over medium heat, add the coconut oil and cauliflower, salt, pepper.  Cook for a few minutes to allow to thaw.  Then add the chicken strips and curry powder, garlic powder and cook for several more minutes.  Add hot sauce.  Cook for another minute.  You’re done.

Add some frozen spinach (either in the skillet or separately) to increase nutritional value.

I think this is a great easy go-to meal when not feeling inspired or don’t feel like cooking.  This makes 2 servings.  And tastes even better the next day.  So you could double the recipe for planned leftovers.  Net carbs per serving = ~7 or 8 grams of carbs.

Of course, this recipe could also be the basis for Italian seasoning, or Mexican Seasoning (chili powder, ancho chili, cumin) or Moroccan or whatever.  It’s a blank canvas and a good starting point.  The variations are probably endless.

These days I am staying away from dairy, but you could easily add a pat or two or three of butter or ghee to finish this off.  Would go well with the hot sauce and curry powder.

Alternatively, you could just grill some fresh chicken breasts, slice them and freeze them for later use.
